Ingredients
1/2 cups gluten free baking flour
1/3 cup unsweetened cocoa powder
1/3 cup coconut sugar
1/2 teaspoon baking soda
1 medium avocado
2 tablespoons coconut oil (melted)
1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mix well and let sit for 5 minutes)
1/4 cup chocolate chips
a pinch of salt for sprinkling on top
Directions
Preheat oven to 350F
Link baking sheet with parchment paper
In large bowl mix together baking flour, cocoa, coconut sugar, and baking soda
In small bowl mash avocado until smooth and stir in flax egg and coconut oil
Add wet ingredients to dry and mix until you have a thick dough
Fold in chocolate chips
Use cookie scoop to form balls and place on baking sheet (should be about 9)
Bake for 8-10 minutes
Remove from oven and let cool
