A grown up take on a childhood favorite, these treats come together in minutes and only have 4 ingredients.
Puffed quinoa is a good source of protein, fiber, and iron (just like the un-puffed version!) but it’s lighter, airier, and crunchier. You can make your own (it’s similar to making popcorn from corn kernels) or you can take the easy route like I did and just purchase it online.
If you’ve never had puffed quinoa before, it’s super versatile. It makes great addition to yogurt or you can add milk and eat it like cereal.
Ingredients
2 tablespoon coconut oil
5 oz. marshmallows (I used these)
3 cups puffed quinoa
Chocolate chips (optional)
Directions
In a large mixing bowl, measure out the puffed quinoa and set aside. Lightly grease and 8x8 baking dish.
In a medium pan, melt the oil over low heat.
Once melted, add the marshmallows and stir with a rubber spatula as they melt.
Pour melted marshmallow mixture over the quinoa and stir so all the pieces get coated with the marshmallow.
Transfer to the baking dish and use the rubber spatula to press into place. Sprinkle with chocolate chips and lightly press down.
Let cool before cutting.
